welcome to the first episode of Albert can cook vs chef and today we'll be making carbonara two different versions I'm Chef Kevin this is your host Albert I'll be making the authentic Italian version and me America Bella Russian and a Korean trying to make Italian pasta interesting America's way with a little twist is a little twist as you can see he has a bunch of ingredients here you know he needs all the help he can get but I'm Gonna Keep It traditional and use technique he's got some uh Buddha's hand he's got some tricks up his sleeve today but we'll see uh which carbonara tastes better of course I win I always win is it competition uh the UFC let's get into it Albert good luck
what's happening it's my Channel first we're gonna prepare the guanciale has to be going Charlie where the Italians are gonna be mad bacon into a cold Pan Once Charlie goes in so we're just going to render out all the fat make it nice and crispy no bacon so you can see it's starting to turn clear that means the fat is rendering out that's what you want once it starts to get brown you have to really watch it because it can burn quickly from here see all that fat that's all flavored now traditionally they use one chale if you don't use one Charlie the Italians will complain about you'll never hear the end of it hey
you see Albert's using non-stick pans a real Chef I can use anything going to Ramsay call me so completely rendered out nice and golden brown we're gonna strain it now look at that's beautiful bacon can't do that we're gonna save the fat cheers we're gonna mix it too now why do you mix the two cheeses gonna put on is less salty has a lot of flavor this is a lot more salty you mix the two cheeses because it has a nice balance when you add it together and it's the Italian way smells like feet it'll be great how high can you go if you're really Italian you can go really high I was Italian before in my old life he's gonna clean my kitchen no I'm not Corona Padano and next pecorino mono that smells really strong
it's a good workout too I think that's enough cheese Ocarina goes in throw this away Grana Padano pecano Romano next we're gonna go in with black pepper I'm using this one because Albert doesn't have the whole peppercorn so don't roast me normally I would toast this first but I'll give Alvin a handicap four egg yolks one two three cuatro and the guanciale fat that's where all the flavors at and we mix and it should make a paste cheers damn that's good and we set it aside what is he doing time to boil the nudes I normally you salt the water heavily but because it's already salty a little less you go up less salt and we use the good pasta feltra bucatini blue package my favorite and the best one sponsor me a filter
you see that the texture is matte that means there's a lot of starch the sauce is going to hold really well we cook it to Al Dente 10 minutes all right cream bacon and peas ah actually it looks pretty good it looks good I cook it Albert's trying to be fancy with the lemon I see huh okay it's Not Gonna Save You Albert call that cutting chives I would get yelled at in the restaurant if I cut it like that so the pasta noodles are done separate pot of water we're going to create steam cheese goes on top pasta goes in so I'm going to pasta water and we mix so the heat from the bottom is going to cook the cheese mix he's cheesing I
didn't have to cheating that's not cheating now we cook it like this so that the eggs don't scramble keep mixing it'll get smoother because the cheese will start to melt one Charlie goes in mix and it should be good to go look at that some more freshly a little bit of fresh pecorino not bad Albert that looks pretty good mine looks better that's debatable Cheers let's taste this one smells like folks cheers what do you think it's okay the salt for me a little salty he said less salt but maybe I could add less pecorino a little pasta cheers I just taste garlic and cream and the bacon this old people like not salted too much cream that's good no peas sauce is a little thick you know what I hate you Albert but I like you a little bit too
but I hate you still not as bad as I thought but not carbonara traditional about how it should taste right this one is um I thought it would be worse but for me still not real carbonara a little too creamy and uh beef actually I don't mind the peas I don't mind it that much but not bad okay just pure taste not comparing it to traditional carbonara out of 10 I'll give you a 7.7 compared to carbonara it's too different it's not carbonara I gotta give you like a three or four for that okay what's it good job Albert can cook so there you have it Italian versus American Italian triumphs in the end as always you can't beat authentic carbonara I lose because of this next time notice what a good solid effort Albert good job a for efforts Americans
