Healthy Carrot Cake Energy Bites: A No-Bake Easter Treat

Hi lovelies. Easter is right around the corner and today I've got a delicious way to celebrate. We are making these carrot cake energy bites that are so delicious and so nutritious as well. The best part is they come together in your food processor so it's going to do most of the work for you. What could be easier than that? Now without further ado, let's get to our carrot cake energy bites.

Now these energy bites are honestly kind of like carrot cake truffles. They're sweet and spiced and so delicious. For this job I am using my food processor. I highly recommend a food processor although you could technically use a high-powered blender here as well, but food processor is probably the best tool to get this job done. I'm just going to take the lid off and I'm going to start by processing my carrots. So if you don't have a food processor and you are going to do this in a high-powered blender, what I would suggest is shredding your carrots beforehand just to make sure that they get properly shredded. The food processor is likely to do a good job at shredding these but

a blender may not work quite as well. So then I'm just going to pop the lid on my food processor and let it work its magic. I'll let that whirl away until my carrots are really well shredded. So now that my carrots are all blended, I'm going to go ahead and add the rest of my ingredients. So I'm starting with some oats here. I'm using some quick cooking oats but you could use old fashioned rolled oats if you wanted to. Next to that I'm going to be adding some pitted dates. Now dates are amazing because they've got a ton of great sweetness but they're also really sticky so they're

going to help these energy bites stick together. I'm also adding some pecans. You guys probably know this by now but I always add pecans to anything carrot cake because they're my favorite nut and honestly they are just so super tasty. If you have time to toast your pecans, I highly recommend doing that cuz you're going to get even more great flavor. But if you wanted to leave them raw, that's also fine. I'm going to get in here with some unsweetened shredded coconut as well. And then to really achieve that incredible carrot cake flavor, I'm going to be adding a splash of vanilla extract to this as well as some cinnamon, ginger, and a little nutmeg. Those warm spices are really what gives carrot cake its signature flavor.

Then I'm just going to pop the lid on my food processor and let this whirl away until all of that mixture is really well combined and starts to form a paste. And that's how you know your energy bites are going to stick together really really well. I like to check it at this point for flavor. Oh yeah, so super good. And these are ready to be rolled out into balls. Now to form my energy bites, I like to use a cookie scoop like this. It keeps everything really uniform, but if you don't have one of these on hand, not to worry. Go ahead and use a teaspoon or a tablespoon instead, just depending on

how big you want your energy bites to be. And then I'm just going to go ahead and scoop a little bit of my mixture. I'll just give it a really good roll between my palms and then once I've shaped my energy bite, what I like to do is roll it in more shredded coconut. This is totally an optional step, but I think it makes these really pretty. This is also a great job for the kids to help with, especially if you're stuck at home on a long weekend and you need projects, which if you're a parent, you understand. We need projects. I actually love that these look like little bunny tails when you're done, so they're perfect for Easter.

L and Cole are going to go coconuts for these. They are totally outrageous. Show your family you carrot with these. Oh my god, right? It's so bad, it's good. Or maybe it's so bad, it's bad. It's hard to say. I'm just going to continue that process until all of my energy bites are complete. And oh my gosh, guys, these are incredibly flavorful and as you saw, so simple to make. And then of course, it's time to taste the fruits of our labor. Taste so much like carrot cake. I love them. They are really nutritious and a great way to cure a snack attack. I like to store them in an airtight container in the refrigerator for up to 5 days. Make sure to hop right to the kitchen and
