Creamy Cucumber Tomato Salad Ready in 10 Minutes

Bienvenidos and welcome to another episode of Spain on a fork so it is a hot summer's day and as you know during these times there is nothing better than making a dish that requires no cooking is easy to make and it's light on its feet anyways today that's exactly what we're doing we're making a creamy cucumber tomato salad and I tell you this dish is filled with so many amazing textures and flavors it's made with simple heart-healthy ingredients and the best part done within minutes folks serve this salad as a starter or even as a main course next to a crunchy baguette and a bottle of chilled Spanish white wine either way

it's a kind of food that's going to fill you with so much goodness alright let's just jump right into this I'm going to cut one English cucumber that's been washed and patted dry into rounds that are 1 cm thick which is a little over a 1/4 inch and as you can see I'm leaving the skin on it as it adds more nutrients and flavors If you prefer you can peel the cucumber then we'll add the slices of cucumber over some paper towels all in a single layer and then season them with sea salt on both sides and let them sit there for about 5 minutes by taking this step that salt's going to extract the water out of the cucumber that way the salad doesn't get watered down and is full of flavor

for the next step I'm going to add in half a cup of plain Greek yogurt into a large bowl which is 125 grams I'm using lowfat but you can also use full fat non-fat or even plant-based one to easily veganize this recipe we'll also add in 1 teaspoon of Dijon mustard which is 5 grams finely grate in one clove of garlic as always if you don't have a grater you can just finely chop it add in half a teaspoon of dried dill, which is about half a gram and 2 tbsp of chopped chives which is 5 grams then we'll squeeze in two teaspoons of fresh lemon juice which is 10 ml and season with sea salt and a generous portion of freshly cracked black pepper

like I've told in the past that black pepper brings out an incredible flavor in the yogurt and we'll give it a whisk until it's well mixed together once everything's well mixed we'll slowly add in 2 Tbsp of extra virgin olive oil which is 30 ml while whisking it continuously make sure to use the good stuff here as this is what truly makes the difference link where you can get the Spanish olive oil I'm using in the description box below then we'll cut two cups of cherry tomatoes in half which is 300 grams you can also use regular tomatoes here about four medium-sized ones will do the trick just cut them into small bite-sized pieces

and add the chopped tomatoes into the bowl with a yogurt dressing and we'll also thinly slice one small red onion and add it into the bowl ok let's move back to the slices of cucumber after letting them sit there for about 5 minutes and that salt has extracted some of the water we'll pat them completely dry and if you see there's too much salt on there just wipe some of it off then we'll cut the rounds in half to end up with half moon shapes and add them into the bowl with the rest of the ingredients then we'll season with freshly cracked black pepper no need to add salt here as the dressing and the cucumber are already seasoned
