going to heat a large fry pan with a medium heat you can also use a stockpot here if you like and add 3 tbsp of extra virgin olive oil which is 45 ml link where you can get the Spanish one I'm using which makes all the difference in the flavors in the description box below while the oil is heating I'm going to cut 7 oz of pork sausage which is 200 grams into pieces that are 1/2 an inch thick which is 1.25 cm I'm using typical Spanish pork sausage known as longaniza but you can use any type of sausage you like here then we'll add the pieces of sausage into the hot fry pan and we'll mix them around that way they're all coated in the olive oil and you don't have to mix this

around continuously but do get in there every 1 to 2 minutes that way all the sausage evenly sautés In the meantime I'm going to finely chop one medium-sized yellow onion finely chop one green bell pepper and roughly chop six cloves of garlic and like I've told you before if you prefer you can prep your ingredients before heating the pan ok let's move back to the pieces of sausage after 5 to 7 minutes and they're lightly browned all around and once again I've been mixing this every 1 to 2 minutes we'll remove them from the pan and set them aside

now using the same pan with the same heat we'll add in the chopped vegetables and at this stage I like to mix this around continuously that way the veggies don't brown too quickly and they all evenly sauté after about 4 minutes and the vegetables are lightly sautéed I'm going to add 1 tbsp of sherry vinegar which is 15 ml you can also use red wine vinegar here or even apple cider vinegar we'll also add in 2 tsp of sweet smoked Spanish paprika which is 5 grams and 3/4 of a tsp of ground cumin which is 2 grams and we'll give it a quick mix and I tell you by adding in the vinegar with the spices right now and lightly sautéing the ingredients

it's going to make them nice and fragrant which gives this dish a beautiful lift of flavors then we'll add in a 14 1/2 oz can of diced tomatoes which is 410 grams and season everything with sea salt and a generous portion of freshly cracked black pepper and we'll give it a mix until it's well mixed together and then simmer it for a few minutes In the meantime let's start prepping our beans I'm going to drain a jar of cooked white beans into a colander this is the same thing as the canned ones and rinse the beans under some water size of the jar that I'm using is 25 oz which is about 700 grams link where you can get the super soft Spanish white beans I'm using in the description box below after simmering the canned tomatoes for about 5 minutes

and you can see the juices have slightly reduced we'll add in the rinsed beans and 2 cups of chicken broth which is 480 ml you can also use veggie broth here or even beef broth that you like and we'll turn it up to high heat and give it a gentle mix once it comes to a boil we'll add in the pieces of sausage back into the pan and give it a mix that way everything's evenly distributed and then we'll place a lid on the pan and lower the fire to a low heat and we're going to simmer this for about 10 minutes that way all the flavors can develop

after simmering the beans for 10 minutes we'll remove the lid and turn off the heat and then using a fork we'll gently mash down on a couple beans this is to help thicken the mixture and then we'll transfer some of our beans into a shallow bowl and check it out folks our Spanish beans with sausage are done easy to make the simplest ingredients and all done in a little over 30 minutes using just one pan let's give this a try and see how it turned out once again folks Alubias con longaniza and I tell you it smells so good in the kitchen today moment of truth

check that out I'm telling you that right there is comfort food at its best the beans absorbed everything in the pan they just melt in your mouth and the rest of the ingredients that lift the flavors with the pork sausage truly shining through easy to make give it a try at home once again perfect for a busy weeknight or for a relaxed weekend lunch either way rnjoy it next to a crunchy baguette and a bottle of Spanish wine for the ultimate treat realy quick before I go a shout-out to a couple of my patreons John Dayan Juan Iturri and Rob Haskins again guys thank you so much for being patreons of Spain on a Fork you know how much I appreciate you if you enjoyed today's video hit that like button
