Hello everyone and welcome back to my channel. It is officially 1 month till I get married. So, I thought it would be the perfect time to do a what I eat in a day. Right now, it is crunch time. My goal is to just eat more veggies, eat more protein, but still make it yummy and flavorful. I also bloat easily and food really affects my skin. If I eat anything that has too much sugar, too much carbs, I will break out. So, to prevent that, these are the kinds of food that I'm eating. I'm sorry. So, without any further ado, let's get on with the breakfast. So, for breakfast, I'm going to be making one of my favorite meals to make. It is so easy, so quick. I just get my little pot and then I just put in all my
veggies. I love bean sprouts because it kind of looks like noodle and I love noodles. It has like a nice crunch. Then, I'm going to cut up some my napa cabbage. And I even have some bok choy laying around, so I'm going to add that. Scallions, enoki mushrooms. Going to do some onions as well. Absolute favorite, thinly sliced beef. And it's so easy. This is what I love about it. Look at that, it is just packed with veggies and protein. We're going to put some bạt súp. You can find really easy like broth stock at the grocery store. I get these at H Mart.
They come in like these little coin tablets like this and it just makes making broth so easy. Add that. It's like soy sauce for soups. Just a little bit. And then we're going to put this on the stove. I forgot to put some red pepper in there. Going to dice up some garlic. Scallions that I had left over. [bell] Sesame oil, I'm going to add a dash of vinegar, black pepper, sesame seed. I'm also going to dilute it with some water. By the time I'm done making the dipping sauce, the food is already ready. We have our dipping sauce right here. Mmm. You guys, this is so good. Such a clean meal, but it's so good. This is why I can eat this like every day.
Mmm. It's healthy and flavorful. Guys, I can't believe I'm about to get married in a month. That's actually insane. The fact that you guys have seen me since I was a college student is also insane. And now I'm doing such adult things. It's scary. It's giving me life. So, for lunch today, I saw this recipe on Instagram. It looked very easy, which is the type of meals that I like to cook. I have some ground chicken, then I'm going to cut up some veggies to put in. Harvesting some basil. We got some cherry tomatoes. And I also have some cute jalapenos. For salt. There's definitely a shell went in there, but extra calcium. Corn starch.
I'm going to garnish with some cucumber, and there we have our lunch. I just realized I forgot to put like oyster sauce in here. I'm going to drizzle some Sriracha sauce. Let's do a little taste test. Let's see. Mhm. Some homemade kimchi on chicken and rice. Mhm. I'm going to watch Agent Kim Reactivated. Taking a little watermelon break. I had so much watermelon this summer. While I snack on some watermelon, I thought it would be a perfect time to do a little monthly therapy check-in. So,

Whenever I'm working, I get hungry so fast. So, I'm
going to make mini spring shrimp rolls. I like spring rolls because it's a fun way to eat vegetables and that's the goal for today. I'm using like leftover ingredients like the paprika, cucumbers. I want to use up all the ingredients. So, these are our veggies and I blanched some shrimp. Four shrimp right here. Let's go over to the living room so we can roll some shrimp rolls and watch the TV. Please ignore all the blankets out here. Those are all Rue's comfort blankets and if I go over there and take them away, he will go crazy. So, I'm just going to leave it. So, I'm going to use these like square rice paper and I'm
going to cut it. I think I'm going to cut it into thirds. I think I'm going to lay my shrimp down here. That's my little mini spring roll. I'm going to lay my shrimp down first. Like I could not eat these vegetables just individually. I like rolling food together and eating it. I think it just tastes better that way. For example, like kimbap. It is now dinner time and we're going to make some beef brisket cabbage kimbap. I eat a lot of rice, but this month I'm going to try to cut down a little bit.
My friends are always shocked at how much rice I eat on a daily basis. For me, every meal has to have rice, but for this month I'm going to try to cut it down just a little bit. I'm going to rinse this. Corn syrup. I don't even know if this goes in here, but just sweeten it up a little bit. A little bit of soy sauce, sesame oil, sesame seeds, and then my jalapeno that's from my garden. And we mix it up. This is my favorite part of the day where I get to just wind down, eat my food, and watch some shows. Ah, so refreshing. I'm going to use a little bit of rice.
I still have to eat a little bit of rice with kimbap. So, I'm going to lay a very thin layer of rice. Cabbage. This is going to be like the main filling. My cheddar. I'm going to make healthy mango mochi. So, I'm going to use Greek yogurt. Rice paper I used earlier. Around a bowl, yogurt inside, mango inside. How cute. And then I'm going to use some cornstarch. On some parchment paper. I find it better if you leave this overnight. Let it fully freeze. Leave it out for a couple minutes before eating.
This is the one that I made last night. I let it sit for a bit so it's not completely frozen. Let's give it a taste test. Mhm. Are you all happy here? That's it for today's video. Thank you guys so much for watching and I will see you in my next one. Bye.
