The challenge win at the Borgata was huge, you know, for me to be able to pick first is a real big deal. I got my number one pick, which is Ben, and I didn't get Lacey. Now, take your team to the dorm, go through the menu, make sure the brigade gets up to speed with what's happening, and really start to bond.

Yeah? Yes, Chef. Quick. Yes, Chef. Have a good meetings. Lacey, good to see you. You, too, Chef. As construction continues on Paula's upscale bistro and Danny's seafood restaurant, the finalists start working on a plan for their kitchens. How do you feel about your menu? I feel good about the menu. How do you feel about, uh, fish, Carol? Excellent. Seafood station, I rocked. I'm on Danny's team and it kind of sucks because I definitely want Paula to win just cuz she's a woman and I'm all about women power. Down to business. All right, all boils down to this. This is my [__] dream about to come true, so

just understand I'm the [__] man. Sure, absolutely. Danny is definitely the underdog going into this, you know, and uh you know, I always root for the underdog. If my good food can play a role in Danny being able to shine, then my work here would be done. I'm the [__] chef. Oh, that's nice. Get used to calling me chef, okay? They used to call me There's a little part to Giovanni that's got a chip on his shoulder about the way he left Hell's Kitchen. I'm not dick face, chef. You're pissed, are you? NO, I'M PISSED AS I AM. DONKEY! NO. JUST HERE FOR ONE MORE DAY. I'd rather be home. I'd rather not see this place ever again. This is it. We got a lot of [__] work to do. While Danny lets

everyone on his team know who's boss, Paula's attention is focused on one member of her brigade. How do you feel about dessert station? All Yeah, I'm just going to be asking you guys for input. I hope no one has a problem with working with me, although I'm sure everybody has a problem working with me. I was going to help you until you were being such a [__] I've never waited tables before. Could you just go and ask the chef to GO ON? I'M LIFTING [screaming] IT! YOU BETTER [__] prove yourself. You just turned on your [__] switch. I'm just so sick of stupid [__] I just keep freaking out. If I fight with anybody right now, I'm

she gives any negativity or whatever, I swear to God I will unleash a wrath on her like she's never seen. I just need you to make sure that your attitude is on top. I don't want anyone to get pissed off. You know, I'd love to believe in my team, but [__] them. They don't believe in me, so what the hell's the point? With the grand opening of the finalist restaurants just 8 hours away. Hey Danny. What's up, guys? You ready to roll? Both teams begin prepping the new menus. Let's prep for like 60, 70 people. Okay. We got to haul ass. You got it. I'm really feeling confident at this point.

We're going to rock tonight. We're going to win. Yep. Paul, I'm going to get your mirepoix stuff ready. Yep, got it. This is a huge inner nervous. We can get the eggplants roasting. Right now I just need to get everything prepped and we just need to all work as a team. You missed me, didn't you? Lacey, I can't even tell you how much I've missed you. Chef. Be nice. I need her, okay? I'm concerned that Lacey's on our team. She's useless. So, we'll see what happens. Maybe she'll just walk off the line during the middle of service.

Lacey, your egg and sugar's mixed. Yep. Lacey's doing dessert, so I definitely need it to just keep an eye on her and help her move along. For the banana crème brûlée, it's got to be a lot of banana. we'll just prep out everything for all three recipes and then you can oversee how You should definitely start with the crème brûlée though because that needs to cool and then set. This is no time to [__] around, brother. This is your future we're cooking for. Well, I appreciate that. You know, it's not about me anymore. I have to keep reminding myself constantly. Tonight's about Danny. All right. Let's go, team blue.

How's the brûlées, Lacey? What? Let's take a look at those brûlées. Let's test one. Mhm, they're still a little soft. Let me see. No. They're all curdled. [__] Oh, jeez. We're going to have to redo this. Let's keep baking these. Lacey [__] up, you know, the crème brûlée. That was just a stupid mistake. I quite frankly think she should just go home because I don't want to look at her if that's what she's going to be doing. I honestly don't know how I'm going to have [__] all this [__] ready.

I just think that's like next to impossible. Both teams rushed to prepare the new menus for Chef Ramsay's approval. Oh, [__] We need to reconstitute the cranberries and port. There's so much to do. There's crap everywhere. It's like 2 hours before dinner service, so I'm stressing out. Dave, can you taste that? I don't think it needs to come up anymore in that, man. I feel like a lot of Danny's success is going to rest on my shoulders tonight. There's a reason why I was picked first. He's going to get Bennett full force tonight.

Behind, behind, hot, behind. I'm not nervous that Chef Ramsay's going to taste my food. I'm just, you know, scrambling around right now and just trying to get it done. Andrea, you got the scallop as well for the salad coming out of here, right? Okay. I absolutely refuse to let Paula down on this end. For me, it's just not an option. Okay, Paula. Quickly. Chef Ramsay is ready to sample the chefs' new menus. The finalists of each prepared their full menu consisting of three appetizers, three entrées, and three desserts. Paula's menu features an appetizer of homemade pasta with roasted eggplant caviar and an entrée of roasted halibut with pearl onions and pancetta.

Her desserts include a banana crème brûlée. Right, let's uh let's start together, madam, yes? Okay. Homemade pasta. They baked it with olive oil, salt and pepper, and that's the eggplant basil purée. That is absolutely delicious. For a vegetarian dish on top of that, yeah, that's that's wonderful. Thank you. Next. Okay, here's the halibut. I've added pancetta to it. The halibut's dry. Mhm. So, whoever's cooking that tonight Yeah. that's a danger zone for me. Whoever's on the fish tonight, make sure Mhm.

Okay, they cook it properly. Andrew's cooking the halibut tonight, and I'm confident that she'll be uh cooking those perfectly. Desserts? Banana creme brulee with uh just whipped cream. That is not a creme brulee texture. It looks like scrambled eggs. A big no-no. Great shame. You can't serve that. Okay. Yeah, that has to be definitely rethought, that one, yeah? Okay. I'm counting on my team for a lot of things right now. I designed the menu. Unfortunately, it's not just me doing this. I need them to do this for me.

The menu definitely needs tweaking. Absolutely. Okay? Uh-huh. All right. Thanks, Chef. All right, Danny. Starters right here, Chef. Okay, good. Danny's starters feature an arugula salad with crispy duck breast. His entrees include an 8-oz pan-seared filet with baked potato. And his desserts feature a cinnamon-poached pear with mascarpone mousse. This one is the duck salad? Yes, Chef. I did some uh arugula with a ginger vinaigrette, crispy skin duck breast. Not so pink. Yeah. The duck definitely needs to be cooked. I like the idea. You've got to be very careful in the execution. It's a dangerous salad

to pull off. You can do it. Make sure you cook it properly. That's not cooked properly. Yes, Chef. Okay? 8-oz pan-seared filet. Twice-baked potato, tempura-fried spring onion. What is that? That's a spring onion, Chef. Okay. Can we cut it in half or do something? It just looks slightly funny. The Chef said my dish looks phallic. I didn't think so. It's not what I was going for. When you taste it, it works. Just don't have it so phallically standing up there. I don't know. I think I'm going to roll with the uh phallic-looking spring onion.

Desserts, we have a cinnamon-poached pear with a lavender mascarpone mousse. Yeah, it's it's not too crunchy for you, that? Um I think maybe it's a little bit under. Even if I was blind then I'm cutting that. I can hear it. Trust me. Yeah. No, I believe it. I'm not here to argue. I'm here to make you look good. I know. Listen, everything I say is an advice. Whether you take it or not is entirely up to you. But that is a poached pear that's undercooked.

Okay. I mean, it may have been slightly undercooked, but these are things that can be changed. No big deal. The bottom line is it just has to taste good. Usually at this time I can see a huge difference in standards in terms of menus, contrast and styles. But both Danny's and Paula's menu is very, very similar. Very contemporary, very modern, and very appealing. So, even before the cooking starts, it's a tie. Let's see how they perform in the kitchen. Paula is trying to keep an eye on Lacy. Cranking it up, Lacy? Yes, Chef. But Chef Ramsay is ready to get his first look at the finalists' restaurants. Okay, Paula. Yes, Chef.

Take me around your restaurant, yes? Let's go. The name of the restaurant is Synergy. And I really like the sun a lot. Hence the vibrant colors, the sunset. Exactly. There's a lot of my influences there. I mean, the candles, the colors, the sun. I love the restaurant. Everything's gorgeous. The floor picks up the color in the yellow. Your dining is very subtle. It's comforting. And there's got a very nice blend of colors. I honestly think that Chef Ramsay liked it. I think Chef Ramsay would have had no problems

telling me he didn't like something if he didn't like something. I'm pleased with it. Yeah, you should be. It's beautiful. Thank you. Yeah. Paula's dining room has received a good review. And now it's Danny's turn. All right, Chef. This is Velvet Hammer. Sound like a porn video, right? Yeah. Velvet Hammer. Yes, Chef. Uh-huh. Every single person in Sarasota calls me Velvet Hammer. Uh-huh. Um, you know, nice silver chargers with the red candles. I have this nice long bench seat going on.

Rich colors, huh? Yeah. What are you doing behind the fish? Uh, kind of a seafood-oriented person. You know, that's what I love to cook. Fish? No, come on. I'm very happy with everything. You know, that's the feel that I wanted in my restaurant. You don't feel intimidated here. You know, it's You're relaxed. Yeah. The idea of the floor is sort of not what you'd expect to see in a restaurant. No. The rusticness of it. Yeah. Cuz it's sort of, you know, countryfied. Yeah. Right. Thank you, Chef. Okay.

I like her dining way better. Oh, yeah. Just minutes away from the most important service of their lives, Chef Ramsay has some final words of encouragement for Danny and Paula. Right. How you feeling? Good. How you feeling? Good, Chef. Yeah. Okay. I just want to say one final thing. I'm extremely proud of you both. You so deserve to be here. Tonight is the night. Thank you. All right, guys, order in. Two pastas, three mushroom salads. Entrees, guys, order in, one halibut, one chicken. Andrea, no answer? Sorry, chef. Vibrant start from Danny, nice and vocal, great comfort in the kitchen. He's already running his team brilliantly. Paula's kitchen, however, is very silent, very flat, and no one seems to be biting. Not good. How many per pre-order, chef? Like, that's one order. That's one order right there. Paula, for every minute you're off this hot plate, you're going to run

two minutes behind. Yes, chef. Yeah, you've got a team. Use your team, please. Yes, chef. I was just running around scrambling, trying to make sure it looked perfect, instead of just standing there on my thumb on my ass. I might as well get yelled at for trying to help. Paula, you've got to start running your brigade. You've gone quiet on me, yes? Turn around and talk to them. They're for you, yes? Guys, we're working THREE SALADS, ONE PASTA, YES? YES, CHEF. I'm plating salad in 10 seconds. Lacy, I need that on the fly, come on. I'm trying, chef. No, no, no, stop. She turned one over cuz it was black as [__] Andrea. Yes, chef. You know it is overcooked. You can't serve that. That's not fine dining. That's not even

fit for a dog, that [__] Lacey, you put it on the plate and turned it over hoping she wouldn't see it. You can't do that to her. GET A GRIP! COME ON, ANDREA. SORRY, CHEF. WHEN IT COMES DOWN to Andrea cooking up scallop, I mean, that's basic stuff you should know. She's screwing Paula. Yes, chef. There's going to be an inbuilt standard here, yes? This is not just throw it out. Andrea was just struggling trying to get those scallops done. Andrea, watch the scallops. It just wasn't working for her.

LADIES, COME ON! WHILE Paula waits for a properly cooked scallop, in the blue kitchen, Danny is trying to get out his first appetizers. Danny. Yes, chef. That's called boiled lobster. Yes. Turn around and run your brigade. Hot pan in there, okay? That's going to taste like rubber. Pull the pan from up top right here. That's going to be smoking hot, that big saute pan right there. Carol started getting backed up on appetizers. Let's go. How long? It shouldn't be real hard. And I was kind of losing my mind, to be honest, at that point. Can't be an ostrich on service. Turn around and run it, yes? Come on, chef.

Danny, come here. 30 seconds. Just here. Paula, 30 seconds. Come here. Look at me. Get a grip with your standards. Make sure you turn around and look what's going on. Everything that leaves this kitchen tonight is going to be judged. Every customer comment card, I'm going to seriously scrutinize. Right now, it's neck and neck. Standards, standards. Come on, both of you. Let's go. Guys, we need to pick this up, okay? Let's go. Where's my lobster at? Carol? 2 minutes. He would say he needed something and then want it right that second.

Let's go, lobster. Come on. I'm like, what the [__] I haven't worked with Carol, you know, and uh she sucked. Lobster, lobster, lobster! 45 minutes into dinner service, customers on both sides are receiving their appetizers. Yes, come back for the last one. Table nine. All right, guys. Yeah, it's good. Halibut, okay? Meanwhile, back in the red kitchen, Paula is waiting for Andrea to deliver the first entree. Watch that halibut, okay, Andrea? Watching it, chef. It actually takes a little longer to cook than I thought. It'll be all right, I promise. [__] me, dude. That was actually the first time in my career that I had ever cooked halibut. Two halibut. Is that too dark? You know it's too dark. Yes, chef. It's pretty tricky, apparently. You know that's not good enough. My big concern before service was making sure that the halibut doesn't go dry. That's dry. Careful whoever's on the fish tonight, make sure that they cook it properly.

ANDREA. YES, CHEF. I NEED THAT HALIBUT IN 30 SECONDS. Come on. Andrea just really had a bad night. It was kind of satisfying in a really sick way. Chef, come check it real quick, please. Ew, that needs a little bit longer. I thought Lacey was definitely a weak link, but Andrea has clearly been horrible. Be careful, please. This [__] halibut. Come on. While Andrea's halibut is holding up the red kitchen, over on the blue side, Danny is anxious to get out his first entree. Let's go. Two filets, regular. Where are they? Waiting on They're waiting on potatoes. How long? 3 minutes. Why are we waiting for a potato?

Sorry, chef. Are the steaks ready? Yes, chef. Steaks are ready, chef. Okay, turn the [__] oven up. We were down two potatoes, you know, and mistakes happen, but it was the wrong mistake to happen. I'm just worried we're standing here now. We're waiting for a color on a potato. Come on, Ben. Get in front of it. Yes, chef. I need it right now, buddy. Coming, I'm coming. This is a hot plate, sir. This is a hot plate. Yes, it's going to be hot. It's always [__] hot. It's a kitchen, you donut. As Danny eagerly sends out his first entrees, Paula is still waiting on Andrea, right now I need on THE FLY

HALIBUT. YOU KNOW [__] MAKE IT HAPPEN. GET A PAN DOWN. PUT A PAN down for the halibut. Come on. Presentation side down and then straight in the oven. Andrea, they have to go in the oven. Paula's finally found her voice and she looks like she's oozing confidence now, but she's just been screwed by three overcooked halibut. Not good enough. While Paula struggles to take charge of her kitchen, over on the blue side Danny is pushing out his entrees. Let's go guys. How long on that monkfish? Right now, Danny.

Monkfish, thank you. That's better with the color on there, yeah? Oh, yeah. [__] Stop. Just taste that. Oh. Gio, what the hell? This is way too salty. Oh my god. Jesus Christ. Gio, salty sauce. YOU OVER SEASONED IT. YES, CHEF. JUST [__] THE WHOLE THING. I'm going to light tonight. That is [__] pissed. Yes, chef. As far as the grill goes, man, I tell you Giovanni let Danny down. How long on that monkfish? I don't care if it's Danny, Paula, it doesn't matter to me who wins. [__] it.

I don't care. I just want to go back home. Whatever. Okay, refire it. Everything's going [__] cold. Oh dear. Major setback on the blue side. Giovanni sent up the monkfish and it was salty as anything. Completely inedible. Unbelievable. All right, I need that monkfish right now, guys. Let's go. While the blue kitchen tries to recover from Giovanni's monkfish sauce, over in the red kitchen Paula is trying to push out entrees. Come on, GARNISH, LACEY, GARNISH. YEAH, IT'S COMING. YOU GOT TO GIVE ME A COUPLE MINUTES. There's just one small problem. SO YOU'RE WORKING TWO PORK, ONE CHICKEN, ONE HALIBUT, YES? YEAH. After that, you're working two pork, one chicken, ONE HALIBUT AGAIN.

OH, [__] OKAY. All right, hold on. Give me a new chicken garnish too while you're at it. Oh, [__] me. It's two of the same tickets, HONEY. I KNOW, but now I have Never mind. It's just a lot of different stuff in a lot of different pans. Just get it done, Lacey. I think Paula's menu is too complicated. a little flustered, you know. Paula's telling me five things to do at once. COME ON, LACEY. GIVE IT ALL YOU'VE GOT. COME ON. YES, CHEF. MOVE, LACEY. COME ON. HANDS ON FIRE, LACEY. DON'T BURN YOURSELF.

God forbid, Chef. LACEY. YES, CHEF. LACEY, LOOK AT ME. JUST TRY HARDER. THAT'S ALL. AM, CHEF. I THINK THIS was the first and only time that Chef Ramsay actually got to me. And he's yip-yapping British [__] in my ear. Come on then. Don't start losing it. Come on. What's he going to do? Kick me off the show? Oh, wait. He already did that. Lacey, cabbage. Cipollini onions as well, OKAY? YES, CHEF. I'M TRYING MY HARDEST. WHAT DO YOU NEED? WHATEVER she just said.

So, I want my entrees in a minute 30. I want those appetizers in 2 minutes. How's that? Thank you. Danny's entire team is working together to get out entrees. Souffle right now, window. Gio, go ahead. Let's do it. I'm plating. This was do or die for me. guys. Let's push. I ran my pass like a [__] maniac. This chicken is nicely cooked, Gio. Thank you. Keep it coming like that all night. 2 hours into dinner service, Paula has finally found her rhythm.

Andrea, yes. Come over here. Clear down the pass and work on THIS SIDE HERE. YES, CHEF. PASTA LA, PASTA, PLEASE. Right now. Paula started picking up her voice, reading those tickets out louder. Listen up. Order in. Four porks, two chickens, two halibut. Yes. Yes, chef. It was really, really intense tonight. But as a team, we came together. You help her plate up. Service. It's going phenomenally well, yes?

Amazing, yeah. Absolutely amazing. With food pouring out of both kitchens, it's a race to the finish. We're going on everything, right Ben? You have everything ready to Everything. We're at the finish line, brother. We're not going to let you down. Come on, you guys. Keep it up, you guys. Let's go. Last three tickets. You have one monkfish, two medium, one med rare to sell.
