Drunken Spaghetti Recipe That Turns Red Wine Into the Ultimate Pasta Dish

Drunken spaghetti is a unique pasta dish where spaghetti is cooked directly in red wine, absorbing rich flavor. This recipe creates a bold, delicious twist on classic spaghetti and meatballs, perfect for an Italian-inspired dinner. The method simplifies the traditional pairing of wine with pasta by infusing the wine into the pasta itself.

DRUNKEN SPAGHETTI Might Be the Best Pasta I've Ever Made. | Transcript:

Wow, this is the craziest spaghetti and meatballs you've ever tasted. Today we will "drink" our spaghetti. But not me. Too early. We cook the pasta in red wine so that it absorbs all this flavor. To which I ask, "Why don't you add wine to your spaghetti?" Listen, during an Italian dinner you eat spaghetti and drink wine. So let's just shorten this process. Because this will make the dish truly delicious, interesting, and fun-"drunk" spaghetti. Well, it just sounds delicious. By the way, do you remember the " Assassin's Spaghetti" we made? You take dry spaghetti and cook it in a pan with sauce. There is something of that method here. We will cook the spaghetti halfway, very al dente. And then transfer it to the pan with the rest of the

ingredients: wine, garlic, Parmesan, and sausages. Let's start with spicy Italian sausage-one of my favorite foods. First, put some olive oil and some butter in a pan. Let them start to melt. As soon as this happens, add the sausages, but not whole. We'll cut them like this. And we'll just throw little pieces in. That's it. Something similar could have been done in The Godfather. Remember that pasta-making scene? Clemenza was making the sauce. You can make the pieces any size you like, but I find a small piece of Italian sausage is good.

Our recipe is below. I use three sausages. That's about 12 ounces. If you want, you can take minced meat and fry it in a pan like beef. But I think it will give the dish more character, you know? I think you understand. So, when everything is inside, let it cook. We will let them fry for 7-8 minutes. Mix a little. Let them fry well. Everything will be okay. That smell.Honestly, it's one of my favorite parts of cooking. You know, and that's the whole point. When you go to a restaurant, you don't get that. Plus, you pay a lot more.

Okay, these guys are ready. I'll get them out and put them aside. Just tried one piece-they are delicious. When we get them out, drain some oil and I'll be back. Thank you to Ryze for sponsoring this part of the video. They make mushroom coffee by combining real coffee with their Super Six Mushroom Blend. And yes, I usually throw mushrooms in the pan, so we're broadening our horizons. You might ask, "Does it taste like regular coffee?" And I will answer: "No, this is completely different." But you may be interested in mushrooms and prebiotic fiber to support digestion. We could all take a little better care of our stomachs. Or maybe you just want a little less caffeine.

Medium- roast coffee contains about half the caffeine of a regular cup. You just reduce the intensity a little bit. It's like a morning boost of energy, not "it's already 7am, I rearranged things in the garage, cooked dinner for the week, and washed both cars." There is medium roast in bags or sticks, dark roast in bags, and vanilla latte in sticks. Prepare hot or with ice, add your favorite milk as you usually do. And I like that part. Opened, poured, poured and mixed. You are making a drink, not assembling garden furniture. Look for Ryze in the coffee section of Kroger stores. Choose your blend and prepare it however you like. So, I left about a tablespoon of oil in the pan, and we're going to add some garlic.

Chop the garlic. Like in the movie " Goodfellas," when, like, he's in prison and cuts garlic with a blade. Let it soften a little over medium heat. Oh, but sometimes you get so excited that you forget to add the shallots. Here she is. I can't wait to taste this. Of course, adding shallots after the fact is not the best idea, but in this case it will work out perfectly. We soften everything for 2 minutes. And while we're here, and everything smells so delicious, let's add some red pepper flakes. And if you're asking, "Sam, wait, isn't that spicy Italian sausage?" "Do we also add hot red pepper flakes?" Well, yes, because you see, spicy Italian sausage is n't really that spicy. That is, for a 4- month-old baby, maybe, but for you and me, not so much.

Now we'll add 2 tablespoons of tomato paste, and we need to heat it for a few minutes. Just until it gets a little darker. And I know that you know, because you are attentive, that all this stuff stuck to the bottom will now come away with the liquid. Are you ready for this? Because it will be our wine. We pour and watch. Just look at these few drops, right here. Do you see this? A great example. Yet. Couple. See what the couple is doing. Cleans everything. So, let's begin. Now we need this to simmer gently for about 5 minutes.

Let's bring it to a boil. And if you're following along, I just threw in some spaghetti. We're going to use this spatula to scrape the bottom and remove all the burnt-on bits. So, 5 minutes here, let it become something incredible. Pasta, 5 minutes in a saucepan, boiling. And yes, that's a lot less than you usually cook it. She will reach readiness here. Yo. Look, nothing stuck. Oh, just a little. So, it all goes here. Okay, time to graze. That's all. Let's go, straight inside. Don't worry about the water, because we'll add it later. Did I mention the recipes below? Because they are there. Oh my

God. The fun is just beginning. Do you remember what I said? Add a little water from the pasta. Okay, now we need this to cook for about 4-6 minutes. The pasta will absorb the wine as we let it simmer slowly. If it starts to dry out, you'll add a little more water from the pasta. So, keep everything under control. For now, there's nothing for you to do except rest and stir occasionally. Perfectly. Okay, I have a few minutes left and you can see the pan is getting a little dry. So, let's add a little more water. And this is the water in which the pasta was cooked, not from the tap, because this water has starch and flavor, and that's what's needed

. OK. Ready for something else? That's it. Sausages are coming back. A piece of butter inside. Stir a little to start the process. And now, last but one, a good piece of parmesan. A whole piece, not from a package, and don't be shy. Please stir. Wow, this is the craziest spaghetti and meatballs you've ever tasted. Okay, last one. A little parsley. The pasta is perfect. It is not dry. It is not boiled. It is tender and ready to serve. They drove. Oho. And now a little more of this. Wait for it. You know, of course, we need to add a little more of this here. That's it. Boom.

Drunken spaghetti with, baby. Madonna mia. Okay, I think a little good extra virgin olive oil adds such wonderful richness. Look. I think, I think if you gave this to someone, they would think it was whole wheat spaghetti or something. I mean, it's not like whole wheat spaghetti is anything special, plus a slice of spicy Italian sausage. What am I eating, Sam? This is incredibly delicious. I won't tell you. You have to guess for yourself. Just make them sit. They'll keep eating it because it's so damn delicious, and maybe they'll understand. I don't know.

I mean, I don't think I would know. I just know it was great. And this is exactly the way to cook Italian sausage. Please don't shred it. Keep it whole, a nice little piece. That's how it should be served. Well, my friend. Oh, look. Cook. The recipe is there. Let us know what you want to see in our performance. Good? Good.
