Bienvenidos and welcome to another episode of Spain on a fork today we're going to grab some canned sardines in olive oil truly one of Spain's most prized ingredients and create a classic recipe this time from the beautiful region of Valencia as you know happens to be where I was born famously known for their sunny beaches and having some beautiful architecture we're talking a Spanish sardine sandwich from Valencia this is known as un Bocadillo de Sardinaset and me tell you this sandwich is filled with so many great textures and flavors made with simple everyday

10% off your order alright let's just dive right into this I'm going to gently drain two cans of sardines in olive oil into a fine sieve with a bowl underneath size of the cans that I'm using are 4 oz which is 120 grams each link where you can get the Spanish sardines I'm using which truly make a difference in this sandwich in the description box below for the next step I'm going to heat a large fry pan with a medium heat and add in the drained olive oil from the canned sardines which is about 3 tablespoons or 45 ml if you like you can also use regular olive oil here while the oil is heating I'm going

to thinly slice one large onion cut one large green bell pepper into thin strips and thinly slice four cloves of garlic and like I told you in prior videos if you prefer you can chop the ingredients before heating the pan then we'll add the chopped vegetables into the hot fry pan and we'll mix them around that way they're all coated in the olive oil and you don't have to mix this around continuously but do get in there every 1 to 2 minutes that way all the veggies evenly sauté while the veggies are cooking let's make a simple mayo alioli I'm going to add in half a cup of

mayonnaise into a bowl which is 120 grams I'm using full fat but you can also use low fat or even non-fat if you like we'll also add in one teaspoon of dijon mustard which is 5 grams finely grate in two cloves of garlic as always if you don't have a grater you can just finely chop them squeeze in 1 teaspoon of fresh lemon juice which is 5 ml and drizzle in 1 tbsp of extra virgin olive oil which is 15 ml then we'll season with a kiss of sea salt and freshly cracked black pepper and we'll give it a whisk until we end up with a beautiful creamy sauce and we'll also finely grate one tomato once again

if you don't have a grater you can just finely chop the tomato ok let's move back to the vegetables after sautéing between 7 to 8 minutes and they're lightly sauteed and they're nice and tender and once again I've been mixing this every 1 to 2 minutes we'll season with sea salt and freshly cracked black pepper and we'll give it one final mix and then turn off the heat for the final step let's start prepping the bread I'm going to be using a crunchy baguette which is what's typically used in Spain of course you can use any bread you like here just make sure to lightly toast it or that it has a hard shell on it that way once you add the ingredients in there it doesn't get mushy and break apart

I'm going to start by cutting into sandwiches that are 3 inches in length which is about 8 cm this is about the typical length of a canned sardine and then we'll cut each piece of bread in half lengthwise to assemble our sandwiches we'll add in a thin layer of the mayo alioli on the bottom and top slice of the sandwich then we'll add in some of the grated tomato over the bottom slice agenerous portion of our sauteed onions and peppers and top it off with two sardines and for the final touch we'll sprinkle it with some chopped parsley check it out our Spanish sardine sandwich from Valencia is done easy to make beautiful presentation and all done in about 10 minutes let's give this a try and see how it turned out
